
2013 Waterhorse Ridge Cabernet Sauvignon
13.7% Alc. - A wine that conjures memories of a bygone era of California Cabernets that aged for decades, balancing an almost ethereal elegance and finesse with the supple texture and refined tannins of its 10 years. Decant for 2 hours or open first thing in the AM.

TASTING NOTES Complete and classic. Rich, gentle, plush and powerful with acidity that will keep it fresh for extended aging. Explosive aromatics, cherry, cassis, candy cap mushrooms, freshly rolled tobacco, soft and chewy pencil lead tannins, mouthwatering acidity and a long finish.
VINEYARD NOTES Jesus and Patricia? two acre vineyard was planted in 1999 on drought resistant rootstock in medium depth mixed loam and volcanic soils. The same combination of cool ocean air and plentiful sunshine that has created some of California? most balanced Pinot Noirs, has proven the same balance in ripening Bordeaux varietals, if planted in just the right spot. The mild and extended growing season allows the grapes to reach a deep maturity of color and flavor at lower alcohol levels, while maintaining a natural acidity that will keep this wine fresh for years and years, reflecting back to a classic era of California Cabernet.
WINEMAKING NOTES The 3 ton lot was partially de-stemmed into an open top fermenter where the grapes were gently foot tread and punched down 1-2 times a day during a native yeast fermentation. The wine was aged for 2 years in French oak barrels including one new barrel.
